This window in pic, just trying to change it to HSB or HSV hue/sat/value from what it currently is, RGB.
Any help would be much appreciated. none of the dropdown option boxes attached to this window lead to that option.

It's a bit tricky but I found it for you...
Go Menu > Window > Color Panels > Color Panel (Full View)
On that panel, click on the upper right corner button to open the option menu
There is an item in there to "Display as HSV"
Both panels should now display as HSV
You can close the Color Panel (Full View) since you likely do not need it any longer...
